Evolution of Diets

In this class, we begin by examining modern diets (late 1800s – 2026) and how our thinking about healthful eating has been shaped over the decades. From popular diets to influences from science, government, marketing, and the media. We'll survey Kellogg breakfast cereals, the Cabbage Soup diet, Zen Macrobiotics, Atkins, Scarsdale, DASH, Zone, Lo-Carb, Mediterranean, Blue Zone, and many other trends and dietary styles. Finally, we’ll compare these modern ideas about healthy eating against indigenous diets (ancient to modern) from around the globe (including Okinawan, K?naka Maoli, Mayan, Aztec, East Africa, etc.) to their nutrient profiles.
